Cod Tikka Masala. (Amar D. Gupta/Siliconeer)


It’s a spicy take on a delicate fish, quick and easy dinner that goes well with naan or rice. Chef Sanjay Patelshows how you can make Cod Tikka Masala at home.


Ingredients:

  • 1 tbsp. olive oil
  • 1 tsp. mustard seeds
  • 1 onion, diced
  • 1 tbsp. garam masala
  • 1 tsp. salt
  • 1 15 oz. can of tomatoes (diced or crushed)
  • 1 cup whole milk
  • 8 oz. cod fish cut into cubes
  • ¼ cup plain yogurt (optional)
  • fresh cilantro (optional garnish)
  • To serve: naan, jasmine, basmati or cauliflower rice

Method:

Pour oil into a large pan or wok.  Add mustard seeds, and heat over medium heat until the seeds begin to pop (2-3 minutes). Add the diced onion, garam masala, and salt.  Stir onions until they begin to soften (3-4 minutes). Add tomatoes. Cover pan, and let the tomatoes simmer over medium heat for about 5 minutes.

Add the milk and fish.  Simmer another 5 minutes.

Taste the curry and add more salt if necessary.

Serve with a dollop of yogurt and fresh cilantro, with a side of Naan, Jasmine or Basmati rice, or you can also use Cauliflower rice as a low carb option.
