RECIPE:
Simple Yet Delicious: Dum Aloo


Easy to make, this simple potato dish is a hugely popular desi comfort food. Sadhana Agarwal shows you how to make it.

Ingredients
  • 25 baby potatoes
  • 2 bay leaves
  • 2 tbsp oil
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala powder
  • 1 tsp sabji masala
  • 1 tsp red chilli powder
  • 1 large onion, paste
  • 1 tsp ginger
  • 2-3 green chillies according to taste
  • 1 tsp cumin seeds
  • 2 large tomatoes, chopped
  • Salt to taste
  • 1/2 tsp sugar
  • 10 pcs cashew nuts, paste
  • Chopped cilantro for garnishing

Method:

Wash and pressure cook the potatoes until the whistle blows. Peel and keep aside. (After peeling the potatoes you can deep fry them to give a nice golden brown color.)

Heat oil in a pan. Add cumin seeds and bay leaves. When they splutter, add onions paste. Saute until golden. Add ginger paste and chopped green chillies and saute for few seconds.

Add chopped tomatoes turmeric powder, sugar, sabji masala and garam masala powder. Bring to a boil, add cashew nut paste and simmer until the oil comes out.

Add cooked potatoes and 1/2 cup water. Bring to a boil. Cover and simmer for 15 minutes.

Serve hot, garnished with chopped coriander with roti and rice.
