Originating in India, it is a savory favorite to compliment your tea.

Heres what you will need:

1 cup jowar (Sorghum) flour
1 cup wheat flour
1 tea spoon salt
1 tea spoon chili flakes
1 teaspoon white sesame seeds
1 teaspoon ajwaain (Carom seeds)
1 teaspoon chaat masala
1/4 tea spoon black pepper powder
1/2 tea spoon red chili powder
1/2 cup oil or ghee (clarified butter)
1/2 cup water
1/4 teaspoon baking soda

First, in a large bowl, mix the two flours together. Add in the salt, chili flakes, sesame seeds, carom seeds, chaat masala, black peeper, and red chili powder. In a separate bowl, mix in oil or ghee with water and baking soda. Then add the water-oil mixture in to the flour. Mix and knead the two until it is a dough. Set this to rest for 10 minutes. In the mean time, preheat the oven to 350˚. Line baking trays with some parchment paper. Now, roll out the dough so that it is 1/4 inch thick. Cut the desired amount of pieces with a heart cookie cutter or any other shape. Poke several times with a fork. After putting the mathri on the baking trays, place in the oven. Halfway through, flip the mathris and then let it finish. Take it out and cool completely before serving them with piping hot tea.
