Stuffed Idly: Something New to Spice Things up
Idly, being one of the first things to come to mind when talking about South Indian food. Here is something cooked up to add some spice to your daily life.
For Peda Stuffing
2 medium-size boiled potatoes, mashed
1/4 cup boiled peas
1 tablespoon roasted cashew small pieces
1 tsp chat masala
Salt to taste
1/4 tsp turmeric
1 tsp ginger & chili paste
Mix everything and make several small-sized pedas (shaped something like a pizza dough ball).
For the ldly
1 cup suji (semolina)
1/2 cup yogurt
1/2 cup chopped spinach
1 tsp chopped ginger
1 tsp chopped green chili
1 tablespoon oil
1/2 tsp Eno
Salt to taste
Take the semolina in a big bowl. Mix in the salt, green chili & ginger. Now, add in the spinach and mix well. Mix in the oil and yogurt. Afterward, put in 3/4 cup water and mix to make the batter. Let the batter rest for 5 minutes. Then, put the Eno in.
Now set some water in a large pot to boil. Grease the idly stand. Put two teaspoons of the batter in each slot of the idly stand. Put one potato peda on top of the batter and cover the peda with the batter. Fill in all the compartments like this. Steam the idly for 15-20 minutes. Once it’s done, take out the idly stand and let it cool completely. After cooled, take the idlys out of the idly stand.
For the garnish put 1 tablespoon oil in a pan. In that add 1 tsp mustard seeds, 1 tsp cumin seeds, 8 curry leaves, 1 tsp red chili powder, 1/2 tsp turmeric powder, and 1 tsp coriander powder. Mix well and simmer for 2-3 minutes. Take it out and pour little bits on top of each idly. Add some chopped green coriander on top to finish.
