Looks can be Deceptive: Taju Halwa
It’s not what it looks, and it is packed with the goodness of unexpected ingredients, writes Sudha Gupta.
Ingredients:
- 1 cup watermelon rind, chopped (without the skin)
- 2 paan leaves
- 1/4 cup cashews
- 2 green cardamom
- 1/2 cup milk
- 1/2 cup semolina
- 1/4 cup gram flour
- 1/4 cup clarified butter (ghee)
- 1 1/4 cup sugar
- 1 cup milk
- A pinch of saffron
- 2 tsp rosewater
Method:
- Blend the watermelon rind, paan, cashew, cardamom, and milk until a smooth paste.
- In a nonstick pan, roast semolina in ghee on low heat until there is a light pink tint and then add gram flour.
- After one minute add the content of the blender to the pan and mix.
- Keep the pan on the stove until it is thick and then mix in the sugar.
- Mix in milk and let it sit on the stove for about 3-4 minutes.
- Remove from the stove and put in the saffron & rose water.
- Garnish it with your choice of nuts and serve.
