Gupta | Siliconeer)<\/p>\n<hr \/>\n<p>It\u2019s a classic, a favorite of all ages that\u2019s not for the bold at heart. Mildly spiced, a little sweet, this vegetarian curry tops the charts on most restaurant menus. <b>Chef Sanjay Patel <\/b>shows how to make it at home.<\/p>\n<hr \/>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>300 gms <i>paneer<\/i><\/li>\n<li>1 cup peas<\/li>\n<li>1 cup corn<\/li>\n<li>\u00bc cup chopped cashew nuts<\/li>\n<li>1\u00bc cups water, add as required<\/li>\n<li>\u00bd tsp cumin seeds<\/li>\n<li>\u00bc tsp turmeric powder<\/li>\n<li>\u00bd tsp red chili powder<\/li>\n<li>\u00bd tsp <i>garam masala<\/i> powder<\/li>\n<li>\u00bd cup heavy whipping cream (optional)<\/li>\n<li>\u00bd tsp sugar<\/li>\n<li>2.5 tbsp cooking oil<\/li>\n<li>\u00bc cup cilantro (for garnishing)<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<p><b>For the masala paste:<\/b><\/p>\n<ul>\n<li>\u00be cup chopped tomatoes<\/li>\n<li>\u00bd cup chopped onions<\/li>\n<li>2 green chilies, chopped<\/li>\n<li>\u00bd inch ginger chopped<\/li>\n<li>2-3 garlic, chopped<\/li>\n<li>2 tbsp chopped cilantro<\/li>\n<li>12 whole cashews, chopped<\/li>\n<li>4 to 5 black peppercorns<\/li>\n<li>2 to 3 cloves<\/li>\n<li>\u00bd inch cinnamon<\/li>\n<li>1 tsp coriander seeds<\/li>\n<\/ul>\n<p><b>Method:<\/b><\/p>\n<p>Blend all the ingredients mentioned under \u201c<i>masala<\/i> paste\u201d in a blender to a smooth paste. No need to add water while grinding. Keep aside.<\/p>\n<p>Heat oil; add \u00bd tsp cumin seeds &amp; saut\u00e9 till they splutter. Add the ground <i>masala<\/i> paste and stir. Saut\u00e9 for 10-12 minutes or more on a low to medium flame till the oil separates from the paste. Add all the dry spice powders &#8211; turmeric powder, red chili powder, <i>garam masala<\/i> powder and stir well. Add cream and cook for a minute while stirring. Then add the peas, corn and chopped cashew nuts and cook for few minutes. Add water and season with salt. Cover the pot and simmer on slow heat until the peas and corn are cooked. If the curry appears thin, then simmer till it reaches the desired consistency. If the gravy appears thick, then add some water and simmer.<\/p>\n<p>Add the <i>paneer<\/i> cubes. Simmer for 1-2 minutes on a low flame or till the <i>paneer<\/i> cubes get cooked. For a slight sweet taste, you can also add sugar right before you add <i>paneer<\/i> cubes. Don&#8217;t overcook as the <i>paneer<\/i> could become hard. Once cooked, garnish with fresh cilantro.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Reshmi Matar Paneer (Amar D.
