Gupta\/Siliconeer]<\/em><\/p>\n<hr \/>\n<p><em><strong>Chef Sanjay Patel<\/strong> shows you how adding a desi flavor to this Chinese dish can work wonders when you want to please the adults and kids alike.<\/em><\/p>\n<hr \/>\n<p><strong>Ingredients<br \/>\n<\/strong><\/p>\n<ul>\n<li>1 tbsp peanut oil<\/li>\n<li>1 shallot, finely chopped<\/li>\n<li>\u00bc white onion, chopped<\/li>\n<li>2 tbsp butter<\/li>\n<li>2 tsp lemon juice<\/li>\n<li>1 tbsp ginger garlic paste<\/li>\n<li>1 tsp garam masala<\/li>\n<li>1 tsp chili powder<\/li>\n<li>1 tsp ground cumin<\/li>\n<li>1 bay leaf<\/li>\n<li>\u00bc cup plain yogurt<\/li>\n<li>1 cup half-and-half<\/li>\n<li>1 cup tomato puree<\/li>\n<li>\u00bc tsp cayenne pepper, or to taste<\/li>\n<li>pinch of salt<\/li>\n<li>pinch of black pepper<\/li>\n<li>1 small can orange with segments<\/li>\n<li>1 tbsp peanut oil<\/li>\n<li>1 lb. boneless, skinless chicken thighs, cut into bite-size pieces<\/li>\n<li>1 tsp garam masala<\/li>\n<li>pinch of cayenne pepper<\/li>\n<li>1 tbsp cornstarch<\/li>\n<li>\u00bc cup water<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Heat one tbsp oil in a large saucepan over medium high heat. Saute shallot and onion until soft and translucent.<\/p>\n<p>Stir in butter, lemon juice, ginger-garlic paste, 1 tsp garam masala, chili powder, cumin and bay leaf. Cook, stirring, for 1 minute. Add tomato sauce, and cook for 2 minutes, stirring frequently. Stir in half-and-half and yogurt.<\/p>\n<p>Reduce heat to low, and simmer for 10 minutes, stirring frequently. Season with salt pepper and add the can of strained oranges. Remove from heat and set aside.<\/p>\n<p>Heat 1 tbsp oil in a large heavy skillet over medium heat. Cook chicken until lightly browned, about 10 minutes.<\/p>\n<p>Reduce heat, and season with 1 tsp garam masala and cayenne pepper. Stir in a few spoonfuls of sauce, and simmer until liquid has reduced, and chicken is no longer pink.<\/p>\n<p>Stir cooked chicken into sauce.<\/p>\n<p>Mix together cornstarch and water, then stir into the sauce. Cook for 5 to 10 minutes, or until thickened.<\/p>\n<p>Serve this dish hot with noodles, fried rice or naan on the side.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>(Above): Orange Chicken [Photo: Amar D.
