Gupta\/Siliconeer]<br \/>\n<\/em><\/p>\n<hr \/>\n<p><em>Vegetarians can look forward to a hot and spicy evolution of eggplant in this recipe, writes <strong>Chef Sanjay Patel.<\/strong><\/em><\/p>\n<hr \/>\n<p><strong>Ingredients<br \/>\n<\/strong><\/p>\n<ul>\n<li><strong>To be mixed into a marinade<\/strong><\/li>\n<li>2 tbsp ginger-garlic paste<\/li>\n<li>1 tsp chili powder<\/li>\n<li>1\/2 tsp turmeric powder<\/li>\n<li>salt to taste<\/li>\n<li>1 tsp oil<\/li>\n<li><strong>Other ingredients<\/strong><\/li>\n<li>2 cups eggplant, cut into 1\u201d cubes<\/li>\n<li>oil for deep frying<\/li>\n<li>1 tsp fennel seeds<\/li>\n<li>1 tsp mustard seeds<\/li>\n<li>1 tsp fenugreek seeds<\/li>\n<li>1 tsp nigella seeds (kalonji)<\/li>\n<li>\u00bd tsp cumin seeds<\/li>\n<li>\u00bd tsp asafoetida (hing)<\/li>\n<li>2 tbsp oil<\/li>\n<li>\u00bd cup sliced onions<\/li>\n<li>1 tsp ginger-garlic paste<\/li>\n<li>1 tsp chopped green chilies<\/li>\n<li>\u00bd tsp turmeric powder<\/li>\n<li>\u00bd tsp chili powder<\/li>\n<li>\u00bd tsp garam masala<\/li>\n<li>\u00bd tsp dried mango powder (amchur)<\/li>\n<li>salt to taste<\/li>\n<li>\u00be cup yogurt, whisked well<\/li>\n<li>\u00bd cup cream<\/li>\n<li>3 tbsp chopped coriander leaves<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Mix ginger-garlic paste, chili powder, turmeric powder, salt and oil to form a paste (marinade) and keep aside.<\/p>\n<p>Add eggplants to the marinade and keep aside for 15 minutes. Heat oil in a pan and fry the eggplants till golden brown.<\/p>\n<p>Mix fennel seeds, mustard seeds, fenugreek seeds, onion, cumin seeds and asafoetida (hing) in a small bowl. Heat oil in a pan and add the mixture.<\/p>\n<p>When seeds crackle, add onions, ginger-garlic paste and green chilies and saut\u00e9 till the onions turn translucent. Add the turmeric powder, chili powder, garam masala, dry mango powder and salt and saut\u00e9 for 2 minutes. Add yogurt, fried eggplants and fresh cream and mix gently. Cook for 3-4 minutes.<\/p>\n<p>Garnish with coriander leaves and serve hot with rice or rotis.<\/p>\n<\/div>\n","protected":false},"excerpt":{"rendered":"<p>(Above): Achari Baingan (eggplants) [Photo: Amar D.
