Gupta\/Siliconeer)<\/em><\/p>\n<hr \/>\n<p><em>The faithful veggie staple eggplant gets a flavorful and protein twist in this recipe by\u00a0<strong>Chef Sanjay Patel.<\/strong><\/em><\/p>\n<div>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>5-6 long firm eggplants (preferably seedless)<\/li>\n<li>1 cup crumbled fresh <em>paneer<\/em><\/li>\n<li>1 tbsp <em>paneer<\/em> grated<\/li>\n<li>5 green chilies crushed<\/li>\n<li>\u00bd tsp ginger grated<\/li>\n<li>\u00bd tsp garlic grated<\/li>\n<li>2 tbsp cheese grated<\/li>\n<li>\u00bd tsp <em>ajwain<\/em> seeds<\/li>\n<li>\u00bd tbsp coriander finely chopped<\/li>\n<li>salt to taste<\/li>\n<li>1 tbsp melted butter<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Make lengthwise slits in the eggplants. Place in boiling salted water for 5-7 minutes. Drain and pat dry with a kitchen towel.<\/p>\n<p>Mix all other ingredients except butter.<\/p>\n<p>Stuff the mix well into the eggplants. If necessary, tie with a string to keep intact.<\/p>\n<p>Melt butter and brush over all eggplants. Arrange side by side in a shallow casserole. Grill in an oven till the skin is well sizzled before serving. Remove and unstring if tied.
