It is mild, rich and creamy and makes for a perfect pairing with <em>naan <\/em>or <em>parathas<\/em>. <strong>Chef Sanjay Patel <\/strong>shows how to make it.<\/p>\n<p>[divider type=&#8221;thin&#8221;]<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the Gravy Paste (Grind all into a paste):<\/strong><\/p>\n<ul>\n<li>1 large onion<\/li>\n<li>2 tbsp grated fresh coconut<\/li>\n<li>7 cloves garlic<\/li>\n<li>2 green chilies<\/li>\n<li>2 red chilies<\/li>\n<li>3 tsp coriander seeds<\/li>\n<li>1 tsp cumin seeds<\/li>\n<li>22 tbsp <em>chirongi<\/em> nuts<\/li>\n<li>2 tsp poppy seeds<\/li>\n<li>25mm (1\u201d) piece of ginger<\/li>\n<li>2 tbsp chopped fresh cilantro<\/li>\n<\/ul>\n<p><strong>For Kofta:<\/strong><\/p>\n<ul>\n<li>2\u00bc cup chopped spinach<\/li>\n<li>4 tbsp gram flour (garbanzo flour)<\/li>\n<li>2 slices bread, crumbled<\/li>\n<li>\u00bd tsp grated ginger<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<p><strong>For Stuffing the Kofta:<\/strong><\/p>\n<ul>\n<li>5 tbsp crumbled paneer<\/li>\n<li>1 tbsp chopped cilantro<\/li>\n<li>1 green chili, chopped<\/li>\n<li>7 to 10 raisins<\/li>\n<li>oil for frying <em>kofta<\/em><\/li>\n<\/ul>\n<p><strong>For the Gravy:<\/strong><\/p>\n<ul>\n<li>4 large sized tomato<\/li>\n<li>1 tsp chili powder<\/li>\n<li>1 to 1\u00bd cup heavy whipping cream<\/li>\n<li>4 tbsp ghee or butter<\/li>\n<li>salt to taste<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>Gravy: <\/strong>Cut tomatoes into big pieces, add 4 cups of water and cook. When soft, prepare a soup by passing through a sieve. Heat <em>ghee<\/em> in a vessel and fry the paste very well. Add chili powder and fry again for 1 minute. Add the tomato soup, cream and salt and boil the gravy for at least 10 to 15 minutes.<\/p>\n<p><strong>Kofta: <\/strong>Steam spinach leaves for 5 minutes and squeeze out the water. Roast gram flour in a frying pan for 2 to 3 minutes. Mix the spinach, roasted gram flour, bread, ginger and salt very well.<\/p>\n<p><strong>Stuffing:<\/strong> Mix all the ingredients together for the stuffing.<\/p>\n<p>Make small balls of the spinach mixture and flatten them slightly. Put a little mixture of the stuffing in the center and close it. Repeat for the remaining spinach mixture and stuffing.<\/p>\n<p>Deep fry the <em>kofta<\/em> in oil. Remove, drain and keep aside.<\/p>\n<p><strong>Serving: <\/strong>Just before serving, add <em>koftas<\/em> to hot gravy.
