Gupta | Siliconeer]<\/em><\/p>\n<div>\n<hr \/>\n<p><em>Chef <strong>Sanjay Patel<\/strong> shows how to make a zesty vegetarian treat that can be served both as an appetizer with drinks or as an entr\u00e9e with kulcha.<\/em><\/p>\n<hr \/>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 lb. cauliflower florets<\/li>\n<li>3 cups cooked garbanzo beans<\/li>\n<li>\u00bc each green, red and yellow pepper, large cubes<\/li>\n<li>1 onion<\/li>\n<li>2 red chilies<\/li>\n<li>4 cloves of garlic 2\u2033<\/li>\n<li>3 tsp. finely chopped piece of ginger<\/li>\n<li>\u00bd lb. tin of chopped tomatoes or two fresh tomato pureed<\/li>\n<li>2 tsp. cumin powder<\/li>\n<li>2 tbsp. coriander powder<\/li>\n<li>2 tsp. extra hot chili powder<\/li>\n<li>1 tsp. <em>garam masala<\/em><\/li>\n<li>\u00bd tsp. turmeric powder<\/li>\n<li>1 cardamom pod<\/li>\n<li>2 tsp. dried fenugreek leaves<\/li>\n<li>salt and black pepper to taste<\/li>\n<li>2 tbsp. oil<\/li>\n<li>8 oz. water<\/li>\n<li>vinegar to taste<\/li>\n<li>2 tsp. fresh cilantro<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>Boil the cauliflower florets in water for 3 minutes then rinse in cold water and set aside.<\/p>\n<p>Heat oil in a pan and saut\u00e9 the onion for 5-6 minutes until translucent. Add ginger, garlic and chilies and saut\u00e9 for a couple of minutes. Add tomatoes and some salt and cook for 4 minutes. Add the chili powder, cumin, coriander, turmeric, <em>garam masala<\/em>, cardamom and black pepper and cook for 3 minutes.<\/p>\n<p>Add the cauliflower and mixed peppers, garbanzo and water, cover and simmer for 15 minutes. Add the dried fenugreek leaves and cook for 5 minutes or until you get the consistency you want.<\/p>\n<p>To give the dish a little zest you can add a splash of vinegar.
