Gupta\/Siliconeer)<\/em><\/p>\n<hr \/>\n<p>Nothing goes better with a chilled beer or an ice-cold drink on a hot summer evening. <b>Chef Sanjay Patel<\/b> shows how you can make these sizzling pakoras at home.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<hr \/>\n<p><b>Ingredients:<\/b><\/p>\n<p><b>Stuffing<\/b><\/p>\n<p>2 large potatoes, boiled and mashed<\/p>\n<p>1 tbsp. oil<\/p>\n<p>\u00bd tsp. cumin seeds<\/p>\n<p>1 in. fresh ginger, chopped<\/p>\n<p>\u2153 cup finely chopped onion<\/p>\n<p>\u00bc tsp. ground turmeric (turmeric powder)<\/p>\n<p>\u00bd tsp. red chili powder<\/p>\n<p>1 tsp. ground coriander (coriander powder)<\/p>\n<p>pinch of asafetida<\/p>\n<p>\u00bc cup coriander (cilantro) leaves<\/p>\n<p>salt to taste<\/p>\n<p><b>Batter:<\/b><\/p>\n<p>1 cup besan (chickpea flour)<\/p>\n<p>\u00bc cup rice flour<\/p>\n<p>\u00bc tsp baking soda<\/p>\n<p>\u00bc tsp red chili powder<\/p>\n<p>pinch of asafetida<\/p>\n<p>salt to taste<\/p>\n<p>water<\/p>\n<p><b>Other ingredients:<\/b><\/p>\n<p>5 big chilis<\/p>\n<p>Oil for deep frying<\/p>\n<p><b>Method:<\/b><\/p>\n<p><b>Make stuffing:<\/b> Heat oil in a large frying pan over medium-high heat. Add cumin seeds and allow to splutter. Add onions. Saut\u00e9, stirring occasionally, for 2-3 minutes or until browned. Add ginger. Fry for few minutes or until aromatic. Add turmeric powder, coriander powder, red chili powder and asafetida. Fry for few minutes.<\/p>\n<p>Stir in potatoes. Using a fork or potato masher, mash the potatoes lightly. Season with salt. Add coriander (cilantro) leaves. Stir. Heat through. Remove from heat. Allow to cool slightly.<\/p>\n<p><b>Batter: <\/b>Place chickpea flour (<i>besan<\/i>), rice flour, baking soda, asafetida and red chili powder in a large bowl. Season with salt. Add water little by little to make smooth batter. Set aside.<\/p>\n<p><b>Stuffed Mirchi Pakora: <\/b>Cut open the chilis on one side. Remove seeds and membranes. Rinse under cold running water. Fill each chili with potato masala. Set aside.<\/p>\n<p>Meanwhile, heat oil for deep frying. When oil is hot enough, dip stuffed chili in batter and drop in the chilis one at a time.
