(Siliconeer)<\/em><\/p>\n<hr \/>\n<p>A lamb preparation, from the Himalayan nation of Nepal, that goes well with both rice or<i> Naan<\/i>, writes <b>Chef Sanjay Patel.<\/b><\/p>\n<hr \/>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>3\u00a0lbs.\u00a0boneless lamb diced<\/p>\n<p><strong>Marinade:<\/strong><br \/>\n1\u00a0tsp.\u00a0turmeric<br \/>\n\u00bc tsp. grated\u00a0nutmeg<br \/>\n\u00bd tsp.\u00a0Szechwan pepper<br \/>\n1\u00a0tbsp.\u00a0lemon juice<br \/>\n1\u00a0tbsp.\u00a0red chili powder\u00a0(to taste)<br \/>\n1\u00a0tbsp.\u00a0garlic, finely minced<br \/>\n1\u00a0tbsp.\u00a0ginger, finely minced<br \/>\n2\u00a0tbsp. cooking oil<br \/>\nsalt and pepper to taste<\/p>\n<p><strong>Choila Marination:<\/strong><br \/>\n3\u00a0tbsp. toasted mustard oil<br \/>\n1\u00a0tsp.\u00a0cumin seed, toasted<br \/>\n5\u00a0green chilies, finely minced<br \/>\n2\u00a0tbsp.\u00a0ginger, finely minced<br \/>\n1\u00a0tbsp.\u00a0lemon juice<br \/>\nsalt and pepper to taste<\/p>\n<p><strong>Garnish:<\/strong><br \/>\n1\u00a0tsp.\u00a0fenugreek seeds<br \/>\n10\u00a0garlic cloves, thinly sliced<br \/>\n1\u00a0cup\u00a0red onion, diced<br \/>\n1\u00a0cup\u00a0red bell pepper, diced<br \/>\n2\u00a0tbsp.\u00a0mustard\u00a0or olive oil<br \/>\n2\u00a0tbsp. chopped\u00a0cilantro<\/p>\n<p><b>Method<\/b><\/p>\n<p>In a large bowl, combine all marinating ingredients into a paste. Add diced lamb and mix to coat thoroughly; set aside for two hours.<\/p>\n<p>Grill the meat until cooked through.<\/p>\n<p>In a bowl, mix the choila marination ingredients with the grilled meat, gradually pouring the toasted mustard oil, toss it well to coat thoroughly. Season the mixture with salt and pepper.<\/p>\n<p>To garnish, take a non-stick pan and heat two tbsp. of oil and splitter fenugreek till it turns dark.<\/p>\n<p>Add garlic slices and fry till light brown.<\/p>\n<p>Add diced red onion and red bell pepper, stir until softer.<\/p>\n<p>Pour the oil mixture over the marinated meat.<\/p>\n<p>Add chopped cilantro.<\/p>\n<p>Toss the whole mixture well.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Lamb Choila.
