This marriage between an Indian delicacy and the beloved birthday staple will have your guests running for seconds,\u00a0maybe even thirds, writes <b>Prachi Agrawal.<\/b><\/p>\n<hr \/>\n<h3><b>Ingredients:<\/b><\/h3>\n<h4><b>For the Sponge:<\/b><\/h4>\n<ul>\n<li>2 cups all-purpose flour<\/li>\n<li>1 cup yogurt<\/li>\n<li>1 cup granulated sugar<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<li>1 cup warm milk, 8-10 saffron strands<\/li>\n<li>1\u00bd tsp. baking soda<\/li>\n<li>1 tsp. baking powder<\/li>\n<li>\u00bd tsp. cardamom powder<\/li>\n<li>2 tsp. rose water<\/li>\n<li>1 tsp. vanilla essence<\/li>\n<li>\u00bd cup vegetable oil (recommended for moistness and consistent texture)<\/li>\n<\/ul>\n<h4><b>For <\/b><b><i>Ras Malai<\/i><\/b><b> Milk Soak:<\/b><\/h4>\n<ul>\n<li>\u00bd cup evaporated milk<\/li>\n<li>3 tbsp. sweetened condensed milk<\/li>\n<li>cardamom powder to taste<\/li>\n<li>pinch of saffron (~ 5-6 strands)<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<\/ul>\n<h4><b>For Frosting and Decoration:<\/b><\/h4>\n<ul>\n<li>2 cups heavy whipping cream<\/li>\n<li>pinch of saffron (~ 5-6 strands)<\/li>\n<li>\u00bc tsp. cardamom powder<\/li>\n<li>Sugar to taste<\/li>\n<li>\u00bd tsp. rose water<\/li>\n<li>Edible rose petals<\/li>\n<li><i>Ras Malai<\/i> pieces<\/li>\n<li>Chopped pistachios<span class=\"Apple-converted-space\">\u00a0<\/span><\/li>\n<\/ul>\n<h3><b>Method:<\/b><\/h3>\n<h4><strong>Sponge<\/strong><\/h4>\n<p>In a large bowl, whisk sugar and yogurt together. Add baking powder and baking soda to the mixture. Allow it to rest for 2 minutes until small bubbles appear.<\/p>\n<p>Stir in oil, vanilla essence, rose water, and cardamom powder, mixing thoroughly.<\/p>\n<p>Gradually add all-purpose flour and saffron-steeped warm milk into the yogurt mixture, alternating between the two. Continue mixing until a smooth batter is formed.<\/p>\n<p>Preheat oven to 350\u00b0F (175\u00b0C).<\/p>\n<p>Pour the batter into a greased cake pan. Bake for 35-40 minutes. Baking time may vary depending on the oven. You can check by inserting a toothpick into the center of the cake; it should come out dry.<span class=\"Apple-converted-space\">\u00a0<\/span><\/p>\n<p>Once baked, allow the sponge to cool completely to room temperature on a wire rack.<\/p>\n<h4><b><i>Ras Malai<\/i><\/b><b> Milk Soak<\/b><\/h4>\n<p>In a pan, add evaporated milk, sweetened condensed milk, cardamom powder, and saffron. Heat the mixture over medium heat until it comes to a boil. Remove from heat and allow the <i>Ras Malai<\/i> milk to cool completely to room temperature.<\/p>\n<h4><b>Assembly and Decoration<\/b><\/h4>\n<p>Once the cake sponge has completely cooled, carefully slice it horizontally into three equal layers. Place the first cake layer on your serving plate. Soak cake with the prepared <i>Ras Malai<\/i> milk.<\/p>\n<p>In a bowl, whip the heavy whipping cream until stiff peaks form. Gently fold in saffron, cardamom powder, sugar and rose water to flavor the cream. Spread a layer of the flavored cream over the soaked cake layer.
