Well, here\u2019s a recipe that has a taste of South, North, East and West, all at once, and it is healthy, writes <strong>Sudha Gupta.<\/strong><\/em><\/p>\n<p>&nbsp;<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For <em>dosa <\/em>crepe batter:<\/strong><\/p>\n<ul>\n<li>\u00bd cup grated fresh beetroot<\/li>\n<li>1\u00bd cup <em>sooji <\/em>(semolina flour)<\/li>\n<li>\u00bd cup oatmeal<\/li>\n<li>\u00bd cup urad dal<\/li>\n<li>2 tsp. salt<\/li>\n<li>\u00bc cup yogurt<\/li>\n<li>2 tsp. grated ginger<\/li>\n<li>1 tsp. <em>methi<\/em> seeds (fenugreek seeds)<\/li>\n<\/ul>\n<p><strong>For crepe filling:<\/strong><\/p>\n<p><strong>Veggies:<\/strong><\/p>\n<ul>\n<li>1 cup finely chopped cabbage<\/li>\n<li>\u00bd cup grated carrot<\/li>\n<li>\u00bc cup finely chopped green bell pepper<\/li>\n<li>2 tsp. chopped green chili<\/li>\n<li>2 tsp. grated ginger<\/li>\n<li>3 tsp. oil<\/li>\n<li>3-4 curry leaves<\/li>\n<li>pinch of asafoetida powder<\/li>\n<li>2 tsp. black mustard seeds<\/li>\n<\/ul>\n<p><strong>Paneer:<\/strong><\/p>\n<ul>\n<li>1 cup grated paneer<\/li>\n<li>\u00bd cup chopped onions<\/li>\n<li>\u00bc cup finely chopped cilantro<\/li>\n<li>salt to taste<\/li>\n<li>1 tsp. <em>garam masala<\/em><\/li>\n<li>1 tsp. <em>amchur<\/em> powder<\/li>\n<li>\u00bd tsp. black pepper powder<\/li>\n<li>1 tsp. <em>ajwain<\/em> seeds (carom seeds)<\/li>\n<li>3 tsp. oil<\/li>\n<\/ul>\n<p><strong>Final Prep:<\/strong><\/p>\n<ul>\n<li>1 cup grated sharp cheddar cheese\u00a0or Amul cheese.<\/li>\n<li>\u00bc cup schezwan sauce<\/li>\n<li>cooking oil<\/li>\n<li>ketchup (as accompaniment)<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<p><strong>Method:<\/strong><\/p>\n<p><strong>BATTER:<\/strong> Soak all batter ingredients except beetroots and methi seeds together\u00a0for 12 hours. Put in the grinder and add grated beetroots and water, then churn to make batter for <em>dosa <\/em>crepe. Add 1 tsp. <em>methi<\/em> seeds.<\/p>\n<p><strong>FILLING VEGGIES:<\/strong> Mix everything together. For tempering cabbage mix, heat oil in a pan, add a few curry leaves, a pinch of asafoetida powder and black mustard seeds.<\/p>\n<p>When the ingredients start tempering, add all vegetables\u00a0and stir fry 4 to 5 minutes. Do not add salt in vegetable.\u00a0Take out in a bowl and set aside.<\/p>\n<p><strong>FILLING PANEER:<\/strong> Heat oil in a pan, add chopped onions and <em>ajwain<\/em> seeds. Fry till light brown. Add paneer, salt and all spices, add cilantro, mix well and turn off stove.<\/p>\n<p>Now mix this paneer mixture\u00a0with the earlier cabbage mix. Take out in a bowl and set aside.<\/p>\n<p><strong>FINAL PREP: <\/strong>Heat <em>tawa<\/em> (flat pan) and when it becomes hot, leave flame at medium.<\/p>\n<p>Grease <em>tawa<\/em> with oil, put 2 tbsp. batter on <em>tawa<\/em> to make 7-inch circles of <em>dosa.<\/em> When the batter spread starts drying, add \u00bc cup paneer and cabbage mix and spread it to cover the half-circle of the <em>dosa<\/em>.<\/p>\n<p>Spread 1 tbsp. grated cheese on the paneer and cabbage mixture and add a few drops of schezwan sauce. (Add as desired to taste your spice level).<\/p>\n<p>Fold the other half of the circular <em>dosa <\/em>and cook both sides till crispy.<\/p>\n<p>Remove from pan and serve hot with ketchup.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>(Above): Maharani Crepe Dosa (Siliconeer) It\u2019s for the queen, she wants it all.
