{"id":243046,"date":"2021-06-18T17:15:31","date_gmt":"2021-06-19T00:15:31","guid":{"rendered":"https:\/\/siliconeer.com\/current\/?p=243046"},"modified":"2021-06-18T17:19:05","modified_gmt":"2021-06-19T00:19:05","slug":"desi-babu-english-mem-millet-medley-pancake","status":"publish","type":"post","link":"https:\/\/siliconeer.com\/current\/desi-babu-english-mem-millet-medley-pancake\/","title":{"rendered":"Desi Babu, English Mem: Millet Medley Pancake"},"content":{"rendered":"<p><strong><em>(Above): <\/em><\/strong><em>Millet Medley Pancake (Siliconeer)<\/em><\/p>\n<p><em>In a tale of two staples, <strong>Sudha Gupta<\/strong> mashed up the American breakfast with a Rajasthani meal, and the result was a bouquet of what we can call the Ethnic American.<\/em><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p><strong>For the Base:<\/strong><\/p>\n<ul>\n<li>2 cup millet flour<em> (bajra)<\/em><\/li>\n<li>1 cup fine semolina (<em>suji)<\/em><\/li>\n<li>1 cup yogurt<\/li>\n<li>salt to taste<\/li>\n<li>1 tsp. green chili paste<\/li>\n<li>2 tsp. ginger paste<\/li>\n<li>2 tbsp. cooking oil<\/li>\n<\/ul>\n<p><strong>For the toppings:<\/strong><\/p>\n<ul>\n<li>2 large potatoes (boiled, peeled and mashed)<\/li>\n<li>salt to taste<\/li>\n<li>1 tsp. red chili flakes<\/li>\n<li>2 tsp. lemon juice<\/li>\n<li>3 tsp. butter<\/li>\n<li>1 cup sweet corn (boiled)<\/li>\n<li>1 avocado<\/li>\n<li>\u00bc cup spring onions (chopped)<\/li>\n<li>\u00bd cup carrots (grated)<\/li>\n<li>\u00bd cup beet root (grated)<\/li>\n<li>1 cup cheese (grated)<\/li>\n<li>Green or red chili sauce<\/li>\n<\/ul>\n<p><strong>Method:<\/strong><\/p>\n<p>In a pan, add semolina <em>(suji)<\/em> and millet flour <em>(bajra)<\/em> and mix well. Now add chili paste, ginger paste, and salt to taste, and mix. Add oil and yogurt and mix everything, then add water to make a pancake batter and leave for 30 min.<\/p>\n<p>In a bowl, mix mashed potatoes, salt to taste, red chili flakes, butter, lemon juice.<\/p>\n<p>In another bowl, mix sweet corn with 1 tsp. butter and salt to taste.<\/p>\n<p>In the third bowl, grate the avocado, add chopped spring onions and mix.<\/p>\n<p>Heat oil on medium flame in a non-stick pan. Pour \u00bd cup pancake batter and flatten to cover the pan\u2019s surface. Reduce flame and cover the pan with a lid, leave for 1 min.<\/p>\n<p>Open the lid and sprinkle some of the grated avocado and spring onion mix.<\/p>\n<p>Add some of the mashed potatoes mix and press to flatten on the pancake using a spatula. Cover the pan again with the lid, leave for 2 min.<\/p>\n<p>Open the lid and sprinkle some of the grated beet root and carrots and press again.<\/p>\n<p>Now sprinkle some of the cheese and press.<\/p>\n<p>Add 1 tbsp. corn mix, sprinkle some more cheese, and this time, press gently with the spatula.
