Here&#8217;s a way to use up all those peels from oranges and make a healthy pickle out of them. Enjoy with your choice of breads, <em>roti, paratha,\u00a0<\/em><i>mathri <\/i>or just by itself, writes\u00a0<strong>Sudha Gupta.<\/strong><\/div>\n<div><\/div>\n<div><strong>Ingredients:<\/strong><\/div>\n<ul>\n<li>2 cup orange peels (orange zest) cut in thin and long strips<\/li>\n<li>1\/4 cup \u00a0ginger (thin and long strips)<\/li>\n<li>1 tbsp. finely chopped green chili<\/li>\n<li>1 tbsp. raisins<\/li>\n<li>6 pitted dates, finely chopped<\/li>\n<li>1\/4 cup sugar<\/li>\n<li>3 tsp. salt<\/li>\n<li>1 tsp. black salt<\/li>\n<li>2 tsp. black pepper powder<\/li>\n<li>4 tsp. cumin powder<\/li>\n<li>1 tsp. cardamom powder<\/li>\n<li>2 tsp. <em>garam masala<\/em><\/li>\n<li>One pinch of \u00a0asafetida<\/li>\n<li>1 tsp. fenugreek deeds<\/li>\n<li>1 tsp. <em>kalonji<\/em> seeds<\/li>\n<li>\u00a01 tbsp. lemon juice<\/li>\n<li>2 tsp. vinegar<\/li>\n<li>2 tbsp. peanut oil<\/li>\n<\/ul>\n<div><strong>Method:<\/strong><\/div>\n<div class=\"\">In a microwave-safe bowl add\u00a0washed orange peel strips with\u00a01 tsp. peanut\u00a0oil and mix.\u00a0Microwave the mix for 4 minutes.<\/div>\n<div class=\"\">Remove bowl from\u00a0microwave and add 1\/4 cup sugar, 3 tsp. salt and 1 tsp. black salt and mix well with orange peel strips.<\/div>\n<div class=\"\">Put bowl back in microwave and again heat for 3 minutes.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">\n<div class=\"\">Take out the bowl and\u00a0add:<\/div>\n<ul>\n<li>1 tbsp. oil<\/li>\n<li>vinegar<\/li>\n<li>lemon juice<\/li>\n<li><i>garam\u00a0masala<\/i><\/li>\n<li>cumin powder<\/li>\n<li>black paper<\/li>\n<li>cardamom powder<\/li>\n<li>asafetida<\/li>\n<li>fenugreek seeds<\/li>\n<li><em>kalonji<\/em> seeds<\/li>\n<\/ul>\n<p>Mix well and then add:<\/p>\n<ul>\n<li>ginger strips<\/li>\n<li>chopped green chill<\/li>\n<li>raisins<\/li>\n<li>chopped dates<\/li>\n<\/ul>\n<div class=\"\">Mix everything in the bowl and re-heat for 2 more minutes in the microwave.
