{"id":237774,"date":"2021-03-14T14:55:54","date_gmt":"2021-03-14T21:55:54","guid":{"rendered":"https:\/\/siliconeer.com\/current\/?p=237774"},"modified":"2021-03-17T21:17:57","modified_gmt":"2021-03-18T04:17:57","slug":"the-classic-indian-snack-with-a-twist-velvet-kachori","status":"publish","type":"post","link":"https:\/\/siliconeer.com\/current\/the-classic-indian-snack-with-a-twist-velvet-kachori\/","title":{"rendered":"The Classic Indian Snack with a Twist: Velvet Kachori"},"content":{"rendered":"<div>Kachori, an unmistakable Indian favorite, with a new flavor.<\/div>\n<div><\/div>\n<div class=\"\">What you will need for the filling:<\/div>\n<div><\/div>\n<div class=\"\">2 cups grated beets<\/div>\n<div class=\"\">2 cups potatoes, mashed<\/div>\n<div class=\"\">2 teaspoons corn starch<\/div>\n<div class=\"\">1 teaspoon green chili paste<\/div>\n<div class=\"\">1 teaspoon ginger paste<\/div>\n<div class=\"\">Salt to taste<\/div>\n<div class=\"\">\n<div class=\"\">1 teaspoon red chili powder<\/div>\n<div class=\"\">1 teaspoon black pepper<\/div>\n<div class=\"\">2 teaspoons coriander powder<\/div>\n<div class=\"\">2 teaspoons garam masala<\/div>\n<div class=\"\">3 teaspoons chat masala<\/div>\n<div class=\"\">2 teaspoons pav bhaji masala<\/div>\n<div><\/div>\n<\/div>\n<div class=\"\">On low heat, add 2 tbsp of oil and a pinch of asafoetida (hing) into a pan. Add the grated beets, ginger, chili paste, and salt. Mix together until the beets are half cooked. Then add the red chili powder, coriander powder, and cornstarch. Mix everything well. Add in the mashed potatoes, chaat masala, garam masala, and pav bhaji masala. Mix everything and remove it from the stove.<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">\n<div class=\"\">For the kachori dough:<\/div>\n<div><\/div>\n<div class=\"\">2 cups of flour<\/div>\n<div class=\"\">2 cups of wheat flour<\/div>\n<div class=\"\">2 teaspoons salt<\/div>\n<div class=\"\">1 cup oil<\/div>\n<div class=\"\">1 teaspoon white sesame seeds<\/div>\n<div class=\"\">2 teaspoons red chili flakes<\/div>\n<div class=\"\">1\/4 teaspoon baking soda<\/div>\n<\/div>\n<div><\/div>\n<div class=\"\">\n<div class=\"\">Mix both of the flours together.\u00a0 Add in the salt, sesame seeds, and chili flakes. Now put the baking soda and the oil in. Mix together and knead with both hands. Add 3\/4 cup of water as needed and make a soft dough.<\/div>\n<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">\n<div class=\"\">Make 28 small balls of dough. Use a rolling pin to roll out the dough into 6 inches round rotis. Put 2 teaspoons of beetroot filling in the center of each roti. Fold the edges of the roti on top of the filling to create stuffed balls and slightly press them down. Make all the kachoris like this. Once that&#8217;s done, brush the sides with oil. Set the oven to 350\u02da. Put the kachoris in the oven for 15 minutes. Then flip the kachoris and bake it for another 15 minutes. Remove from the oven when that is done.<\/div>\n<\/div>\n<div class=\"\">\n<div class=\"\"><\/div>\n<\/div>\n<div class=\"\">\n<div class=\"\">For garnishing, you will need:<\/div>\n<div><\/div>\n<div class=\"\">7 slices of cheese, cut into 4 squares each<\/div>\n<div class=\"\">7 black olive, sliced<\/div>\n<div class=\"\">28 jalape\u00f1o slices<\/div>\n<\/div>\n<div class=\"\"><\/div>\n<div class=\"\">\n<div class=\"\">Put one slice of cheese, a slice of jalape\u00f1o, a slice of olive. Repeat on all the other kachoris. Put this back into the oven for 3 to 5 minutes or until the cheese starts to melt.
