Gupta\/Siliconeer)<\/em><\/p>\n<hr \/>\n<p>The festive season is getting started and that calls for splurging a little, on calories. <b>Chef Sanjay Patel <\/b>shows how you can make delicious <i>laddoos<\/i> at home to celebrate and entertain in a traditional fashion.<\/p>\n<hr \/>\n<p><b>Ingredients:<\/b><\/p>\n<ul>\n<li>1\u00bd cup wheat flour coarsely grounded<\/li>\n<li>\u00bc cup<i> besan<\/i> (Garbanzo flour)<\/li>\n<li>\u00bc cup semolina or <i>sooji<\/i><\/li>\n<li>1\u00bd tbsp. oil<\/li>\n<li>\u00bd cup water<\/li>\n<li>\u00bc cup <i>ghee<\/i> (clarified butter)<\/li>\n<li>2 cups oil for frying<\/li>\n<li>1\/3 cup jaggery<\/li>\n<li>1\u00bd tbsp. powdered sugar<\/li>\n<li>1\/8 tsp. nutmeg<\/li>\n<li>1 tsp. poppy seeds for garnish<\/li>\n<li>1 tbsp. raisins<\/li>\n<\/ul>\n<p><b>Method:<\/b><\/p>\n<p><b>Choorma Mixture. <\/b>In a large mixing bowl take wheat flour (coarsely grounded), <i>besan<\/i> (garbanzo flour) and <i>sooji <\/i>(semolina).<b> <\/b>Add 1\u00bd tbsp oil and \u00bd cup warm water.<b> <\/b>Combine all ingredients and knead into dough.<\/p>\n<p>Now take a portion of wheat flour dough and press it by making fist. Press hard and make dumpling shapes from dough.<b> <\/b>Repeat the process for remaining wheat flour dough and make dumplings. Keep aside.<\/p>\n<p>Heat oil in a deep bottom frying pan, on medium flame, don&#8217;t let the oil turn too hot.<b> <\/b>Deep fry the wheat flour dumpling in oil for 4 to 5 minutes or till it is completely cooked from inside and turns golden brown.<b> <\/b>Take out the fried <i>muthias<\/i> (dumplings) and drain excess oil on a kitchen towel or paper napkin. Let the dumplings cool down.<\/p>\n<p>Cut the dumpling into pieces and further grind them in a food processor into fine powder. Sieve through a fine sieve to remove big chunks. Re-grind the remaining chunks if required.<\/p>\n<p><b>Choorma Laddoo.<\/b> Take a nutmeg and pound in a mortar and pestle. Add the nutmeg powder in <i>Choorma<\/i> mixture. You can also add dry fruits like raisins. This is however optional.<\/p>\n<p>Melt <i>ghee<\/i> (clarified butter) in a pan and add jaggery. As soon as jaggery starts floating on <i>ghee<\/i>, turn off the stove. Pour melted jaggery and <i>ghee<\/i> into <i>choorma<\/i> mixture. Add powdered sugar (optional).<\/p>\n<p>Combine all the ingredients to make a nice aromatic choorma mixture. Now make <i>Choorma laddoos<\/i> from <i>choorma<\/i> by pressing it in a <i>laddoo<\/i> mold. You can also make <i>laddoo<\/i> by taking a portion of <i>choorma<\/i> and rolling in hands and making nice spherical balls. Repeat the process for the remaining mixture. Apply some poppy seeds (<i>khas khas<\/i>) to garnish the <i>choorma laddoo<\/i>s, and serve.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Choorma Laddoo. (Amar D.
